The wooden ghani

For generations, Indian villages pressed oil in a wooden ghani: a large mortar with a rotating pestle that crushed seeds slowly. The rotation was deliberately slow, which kept temperatures low.

The oil ran out at one side; the pressed cake was used as cattle feed. Nothing was wasted.

What has changed, what has not

Modern cold-press units use motorised expellers, but the principle is unchanged: press slowly, avoid high heat, skip chemical treatment.

Cleaning and drying the seed properly still matters more than any machine. Good oil starts with good seed.
